Angemachter Camembert
For those cafe visitors who either don't have much of a sweet tooth or simply want a bite of something savory and more substantial, this in the perfect treat.  Even if they are quite a ways from a butcher and have little access to cold cuts, every Black Forest cafe keeps soft cheeses like Camembert on hand, mashed a bit and mixed with fresh, flavorful ingredients like herbs and spices, these cheeses make delightful spreads, which pair nicely with raw seasonal vegetables and slices of pumpernickel bread.
1. Place the Camembert in a medium bowl and, using a fork, break apart into pieces.  Stir the chives, onion, paprika, and caraway seeds into the cheese until well incorporated.
2. To assemble, arrange about 2 lettuce leaves in the center of each plate and spoon one-quarter of the cheese on top.  Place 2 slices of bread and 4 radishes around the cheese on each plate and garnish with a sprinkling of paprika and chives.
Serves 4
4 wedges ripe Camembert cheese (about 3 1/2 ounces each), at room temperature
1/4 cup chopped fresh chives
1 medium yellow onion, peeled and finely chopped
1 teaspoon Hungarian paprika
1 teaspoon caraway seeds
1 head Bibb lettuce, cored and leaves separated
8 slices pumpernickel bread
16 red radishes
Hungarian paprika, for garnish
